For God so loved the world that he gave his one and only Son,that whoever believes in him shall not perish but have eternal live. John 3:16 (NIV)

1 3/4 cups cornmeal
1/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 small onion, finely chopped
1 egg, beaten
2 cups boiling water

1. Combine dry ingredients, egg, and onion, add boiling water, stirring constantly until mix is smooth.

2. Add more water if necessary. Drop teaspoonsful of batter into hot oil (360°F.

3. Cook until golden brown: drain on paper towels.

Yield: 8 to 10 servings.
