3 cups sifted all-purpose flour
1 cup granulated sugar
4 teaspoons baking powder
2 teaspoons salt
1 egg, lightly beaten
1/4 cup shortening, melted
1 1/2 cups milk
1 teaspoon vanilla
1 1/2 cups chopped DIAMOND wALNUTS

Resift flour with sugar, baking powder, and salt. Add egg, shortening, milk, and vanilla to dry mixture. Stir just until all of flour is moistened. Stir in walnuts. Turn into greased 9x5x3-inch loaf pan, or divide batter between 2 greased #2 1/2 cans. Bake at 350°F. about 1 hour 20 minutes for rectangular loaf or 1 hour 10 minutes for round loaves.

Streusel variation: Prepare batter as above. Turn half into loaf pan. Blend 1/3 cup brown sugar, packed, 1 1/2 tablespoons flour, 1 teaspoon cinnamon, and 2 tablespoons butter. Sprinkle over batter; top with remaining batter. Bake as above.

Candied fruit variation: prepare batter as above, adding 2 teaspoons grated orange peel to egg and milk mixture. Stir in 3/4 cup chopped candied fruit with the walnuts. Bake as above.
