Casseroles

For God so loved the world that he gave his one and only Son,that whoever believes in him shall not perish but have eternal live. John 3:16 (NIV)

1 pound ground beef
1/4 pound bulk pork sausage
1 small onion, chopped
1 clove garlic, finely chopped
1 1/2 teaspoons salt
1 1/2 to 3 teaspoons chili powder
1 can (16oz.) whole tomatoes, undrained
1 can (16oz.) whole kernel corn, drained
20 to 24 pitted ripe olives
1 cup cornmeal
1 cup milk
2 eggs, well-beaten
1 cup shredded cheddar cheese

Heat oven to 350°F. Cook and stir ground beef, sausage, onion, and garlic until meat is brown; drain. Stir in salt, chili powder, tomatoes, corn, and olives. Heat to boiling. Pour into ungreased square baking dish, 8 x 8 x 2 inches, rectangular baking dish, 12 x 7 1/2 x 2 inches, or 2-quart round casserole. Mix cornmeal, milk, and eggs; pour over meat mixture. Sprinkle with cheese. Bake uncovered until golden brown, 40 to 50 minutes.

Yield:6 to 8 servings.
