Peach Ice Cream

3 cups fresh peach pulp or 3 cups (three 16-ounce jars) frozen peach slices pureed, with syrup
2 cups water
1 quart undiluted CARNATION Evaporated Milk
2 cups sugar
2 tablespoons lemon juice
1/4 teaspoon salt
1 tablespoon vanilla

Puree peaches to make pulp. (If using frozen peaches, puree and add enough syrup to make 3 cups pulp.) Blend peaches, water, CARNATION, sugar, lemon juice, salt, and vanilla. Pour into 1 gallon freezer. Cover. Freeze with ice-salt mixture in proportions recommended for freezer. When Ice Cream is frozen, pour off brine. Remove dasher and pack with ice and salt. Allow to stand 1 1/2 to 2 hours to ripen.

Makes 1 gallon

Variation:
Strawberry: Omit peaches and water. Combine 3 cups (3 to 4 pints) fresh strawberry pulp with remaining ingredients. (If using frozen strawberries, thaw three 10-ounce packages. Mash strawberries with syrup. Reduce sugar to 3/4 cup.)
