Oatmeal Blueberry MuffinsMuffins
1 1/4 cups all-purpose flour In large bowl, stir together flour, oats, sugar, baking powder, and salt; set aside. In small bowl, mix egg, water, and oil; add all at once to oat mixture, stirring just until moistened. Stir in blueberries. Spoon into greased muffin cups 2/3 full. Blend 2 tablespoons sugar and cinnamon; sprinkle over batter. Bake in a 400°F. oven for 18 to 20 minutes. Makes 1 dozen muffins. In large bowl, stir together dry ingredients: set aside. In small bowl, mix egg, banana, milk, and oil. Add liquid mixture all at once to dry ingredients, stirring just until moistened. Spoon batter into greased muffin cups 2/3 full. Bake in a 375°F. oven for 15 to 18 minutes. Makes 1 dozen muffins.
