2 cups ready-to-eat bran cereal
1 cup boiling water
4 eggs
2 cups sugar
1 cup cooking oil
1 quart buttermilk
4 cups 3 MINUTE BRAND Quick OATS
5 teaspoons baking soda
1 1/2 teaspoons salt
5 cups all-purpose flour

Stir together bran cereal and boiling water; set aside to cool. In large bowl beat eggs. Stir in sugar, oil, buttermilk, and oats; mix well. Add remaining ingredients, stirring just till moistened. Gently stir in cooled bran mixture. Grease muffin cups or line with paper bake cups: fill 2/3 full. Bake in a 400°F. oven for 18 to 20 minutes.

Note: Batter may be stored in refrigerator for up to 1 month. Makes about 4 dozen muffins.
