Pie & Pastry

For God so loved the world that he gave his one and only Son,that whoever believes in him shall not perish but have eternal live. John 3:16 (NIV)

3 Texas eggs, slightly beaten
1/4 teaspoon salt
1/2 teaspoon vanilla
1/2 cup brown sugar
1 cup light corn syrup
1 cup Texas peanuts

Mix all ingredients together and pour into an unbaked 9-inch pie shell. Bake 10 minutes in oven preheated to 450°F. Reduce heat to 350°F. and bake 35 minutes longer. Chill. If desired, top peanut pie with whipped cream and garnish with roasted peanuts. Serve this pie in small wedges as it is very rich.
