3 pounds fish fillets, fresh or frozen (thawed) cut into serving sizes.
1 1/3 cups cornmeal
2/3 cup all-purpose flour
1 tablespoon salt
2 teaspoons pepper
1 cup buttermilk

1. Combine cornmeal, flour, salt, and pepper.

2. Dip fish fillets in buttermilk and roll in cornmeal mixture, coating thoroughly.

3. Fry fish fillets in hot oil (375°F.) for 4 to 5 minutes or until golden brown.

Yield: 8 to 10 servings.
