3 pounds fish fillets, fresh or frozen (thawed) cut into serving sizes. 1. Combine cornmeal, flour, salt, and pepper. 2. Dip fish fillets in buttermilk and roll in cornmeal mixture, coating thoroughly. 3. Fry fish fillets in hot oil (375°F.) for 4 to 5 minutes or until golden brown. Yield: 8 to 10 servings.
